Substituting Chuck Roast with Short Ribs

  • I will be using the Test Kitchen's Beef Burgundy recipe in a slow cooker. But, I want to replace the chuck roast with boneless short ribs. Do I still cook it for the 9 hours on low or does using short ribs change the time? The beef burgundy recipe calls for tapioca, but the short ribs call for gelatin. Do I do both?
