Substituted one EMU egg weighing 1.69 lbs for the egg requirements of the "flan" portion of this recipe - which called for 6 large chicken eggs and 4 yolks. Emu yolk to white ratio is larger than that of a chicken egg - so I knew it would work. Best flan I have ever made - turned out perfectly. So if anyone else collects their own emu eggs, the substitution worked great for the flan portion of the recipe.
